Lazidaze Salad for Every Occassion.....
Honestly this salad is so easy to throw together and looks so vibrant on the table. For the chicken version:2 chicken breast fillets2 tablespoons of Moroccan seasoningJuice of one lemon¼ cup Greek yoghurt1 clove of garlic chopped finely3 tablespoons of olive oil plus a little extra for cooking.Salt and pepper to taste (if you don't add salt, don't bother)
1. Slice chicken breasts through the middle lengthways to make them thinner then slice again into strips.2. Place chicken strips in a bowl with the Moroccan seasoning, lemon juice, garlic, olive oil, yoghurt and salt and pepper. Mix till combined then cover with cling wrap and place in the fridge to marinate for an hour or two (this can be done the day before).3. Heat up extra oil in a frypan (these can be cooked on the B.B.Q. too) fry chicken a few pieces at a time till cooked.

This should only take a few minutes as they cook quickly. If you’re not sure if they are cooked just cut the thickest part of the strip open and have a look.
For the salad:
Cover a large platter with cos lettuce or your choice of lettuce.Place some, mango, avocado, cherry tomatoes, cucumber, red capsicum and anything else that takes your fancy over the top of the lettuce. Nectarines and peaches ar great too in Summer.🌞Place the warm (not hot) chicken pieces on top of the salad.Shake then pour some Lazidaze dressing over the top. Don't be stingy now! Serve on a large flat platter and garnish with red onion rings, chopped fresh parsley and some toasted pepitas (they give a beautiful crunch). Enjoy in the sunshine with a glass of wine.VARIATIONS:*Use cooked large prawns instead of chicken as pictured. No need to marinate them just use them as they come. Easy Peasy!*For a vegan salad use tofu and extra toasted seeds.*Use cooked chorizo or crispy bacon, or both!*For vegetarians, top with grilled saganaki or halloumi
Lazidaze Pumpkin, Green Bean and Fetta Salad
Peel and cut some jap or butternut pumpkin into small cubes. Toss in some olive oil and salt and pepper. Place on a baking tray lined with baking paper. Splash a little balsamic vinegar (optional) over the top and roast till browned and cooked through. Cool.Blanch some fresh beans in some boiling water for a couple of minutes then run them under cold water to stop further cooking. You want the beans just slightly cooked, bright green and still firm.Cut some snow peas into thin stips and halve some small cherry or baby roma tomatoes.Slice some cucumber, red capsicum and red onion.Spread your favourite lettuce on a large flat platter, scatter over all the other salad ingredients. Crumble some fetta over the top and lastly, just before serving splash over that divine dressing. 'Voila'💛
Notes:* Prepare this salad a day ahea. Have everything washed and sliced in snap lock bags except the tomatoes. They are best cut on the day. This is especially handy if you are taking it somewhere. Casually arrange it when you arrive, listen to the oooh's and ahhhh's.
* Asparagus (blanched) is good in this too. This recipe, like all my recipes, there are no quantities, the ingredients can be swapped and changed to suit you and your vegetable crisper.
Lazidaze Smashed Potatoes
You will need ........Lazidaze Dressing. As many unpeeled and washed potatoes as you need, whole small ones or cut larger ones into halves. Brown onion thickly sliced (about 1 large onion for 2 people) , roughly chopped garlic (the more the merrier), olive oil, butter, chopped parsley and salt and pepper. (If you're vegan - leave out the butter - just as good!)
Place the potatoes in the microwave and pierce the skin with a fork. Cook on high till soft in the middle. While the potatoes are cooking, place onions and garlic in a pan over medium to low heat with a splash of olive oil and some butter, cover and cook till onion is soft and transparent.
When potatoes are soft, squash them with a clean tea towel and put them into the pan with the onions and garlic. Add a generous amount of salt and pepper and some more olive oil and butter. Turn heat up and cook till the potatoes have lovely brown bits through them. Place on a serving dish and splash over that wonderful Lazidaze Dressing. Top with the parsley and serve. ❤❤❤

As mentioned before, 'not just a salad dressing but good on everything', yes I just have to say it again.
How's this for a lazy Sunday breakfast! Toasted Turkish bread, multigrain toast or sourdough, topped with avocado, poached egg and of course the liquid sunshine🌞, Lazidaze Dressing. So simple.
Glam it up with a little Siracha and some crumbled fetta.

What could be more simpler! Jazz up your fish 'n' chips. Make a simple salad, order your fish and chips, serve with Lazidaze Dressing on everything! You have no idea how good it is on hot chips. Replace the fish with calamari, even better.

If glazing a ham is all too tricky, fear not! Slice some ham and put it on an oven proof plate, drizzle with some Christmas in a Jar - Brandy Orange Ham Glaze. Cover in foil and heat. Drizzle with a little more glaze over the top for serving.
Microwave ("the cheat's version"):
Place ham on a plate and drizzle as above. Cover with cling wrap and heat on medium till warm.
For a Boxing Day lazy breakfast, top multigrain toast with slices of ham and Christmas in a Jar Ham Glaze.🎅🎅🎅
